Millet pancakes

Hi healthy eaters!
We’ve mentioned it thousands times before that breakfast is the most important meal during the whole day. That is why you should start off with providing your body as much good nutrients as it’s only possible. Nonetheless, you may encounter some troubles while trying to live the healthiest way imaginable. One of these might be a breakfast idea, because we all enjoy to make our meals more fancy each time. It’s actually like with songs, once you’re really into a song, you tend to repeat it all over again and then…. you get bored. So what you have to do is to follow a few steps we’re about to present and you will definitely  differentiate your morning treat. As you probably already know, we’re huge fans of millets, but also a bit of thrill seekers in terms of food. What we did was to change a recipe for a traditional millet and make it more fun, but still healthy, tasty and beautiful. Searching for wholesome meals as usually (we’re just a little bit food addicted – that’s why), we found out that there are many ways of preparing millet and we started to seek ‘deeper’. Basically, the recipe is modified, however, inspired by smakoterapia.blogspot.com and it’s super awesome. Millet is not only extremely tasty, but it also includes copper, phosphorus, manganese and magnesium. It’s just worth recommending!

Serves 3

Ingredients
1 egg
1/2 cup uncooked millet
1/2 tsp turmeric
1-2 tbsp wheatmeal
2 tbsp potato starch
1 tbsp not melted coconut oil
water

Instructions
Start everything from cooking millet (if you are doing pancakes for breakfast, you can cook it previous day). Rinse millet with warm water and put in a pot with boiling water. Cook until tender. Then add all ingredients to a bowl (or blender if you do not have hand blender) and blend. Mixture should be similar in texture to cream, so you have to add as much water as necessary (it should be about 1/4 cup, but add it gradually starting from smaller amount).
Be carefull to pre-heat pan, then pancakes will be faster ready. Place spoon of mixture on hot pan and distribute evenly forming circles. Turn on the other side when upper part dry. Each pancake fry for about 2-3 minutes.





You can serve them with yoghurt mixed with cinnamon,cottage cheese, bananas and apples or whatever you want! Pancakes are delicious in every combination (trust us!)
