Mexican salad

Hi healthy eaters!
You may not be familiar with the fact that we’re kinda into fashion as well people. And well, there are a few fashion bloggers we follow and get inspired from in terms of cloths. But it’s not like we have our favorites or so, but basically we just check their blogs from time to time in order to what they want to present the world. We’re actually fascinated with their live, because they are able to sightsee and travel so much that it makes us feel a little bit jealous. Nonetheless, we’re aware of the fact that actually they have had to do something amazing so that to be seen and noticed by media. Recently, one of polish fashion bloggers  had an opportunity to travel to Mexico coupled with trip-loving bloggers as well. Throughout their two weeks of chilling, they could see so many places and meet a lot of incredible people too. We dare say they had an awesome time together and they were just enjoying the moment, which all appreciated much. And we also got inspired so we decided to try some Mexican Salad and let you guys know what we think and ‘taste’ about it. Just three words – It Is Amazing! Obviously, you should follow the rules of the preparation and make it for yourself. Have fun!

Recipe from Minimalist Baker






























Ingredients
4 cups salad, rocket or any greens of your choosing
1 cup cooked quinoa
1 cup canned black beans
1 cup canned corn
1/4 cup red onion
1/2 avocado
1 orange

Dressing:
1/2 avocado
1 lime
3 tbsp orange juice
1 tbsp honey
pinch of salt and pepper
few basil leaves
3-4 tbsp olive oil

Instructions
1.Rinse 1/2 cup quinoa carefully and bring to a boil with 1 cup water. Once boiling, reduce heat to simmer, cover and cook for 15-20 minutes. Prepere rest of the ingredients, place greens, corn, beans, chopped onion, chopped avocado and segmented orange in a bowl.
2. Prepere dressing by putting all ingredients in blender and mix until creamy.
3. Add quinoa and combine everything.
